*May’s Desserts*

FRUIT SALAD (serves 4)
2 Oranges
1 Lemon
1 Apple
4 oz. Melon
2 ½ oz. Grapes (seedless)
1 Pear
2 oz. unsweetened fruit juice
Squeeze lemon & strain into fruit juice. Peel the apple & pear and core them. Cut into cubes and place in fruit juice. Remove the pips from the melon and cut off the skin. Cut into chunks & add the other fruit. Peel the oranges and remove the pith. Cut and add to the fruit salad. Lastly add the grapes. Mix everything together well and serve.
(65 calories per portion)

BAKED APPLE (serves 4)
4 Cooking Apples
Sweetener’s to taste
10 oz. natural low fat yogurt
Pinch of nutmeg
Core apples & slit skins. Put in oven-proof dish with sweeteners dissolved in water. Bake in a moderate oven for approx. 1 hour. Serve with yogurt flavoured with nutmeg.

FRUIT SUFFLE (serves 5)
2 Egg whites
Pinch Salt
½ tsp lemon juice
½ pt. thick unsweetened fruit puree
Sweetner to taste
Liquidise fruit puree. Add sweetner to taste. Beat egg whites & salt. Fold in fruit puree& lemon juice. (50 calories per portion)

FRUIT MERINGUE (serves1)
1 average sized piece of fruit e.g. apple, pear etc
1 egg white
Sweetner if desired
Peel the fruit, cut into pieces and stew gently. Puree the fruit and place in a dish. Sweeten to taste with artificial sweetner if desired. Whisk the egg white until stiff and standing in peaks. Spread it on top of the pureed fruit. Bake in a low oven (350 degrees F gas mark 2) for 20 mins or until brown.
