BEEF CASSEROLE (Serves 4)
1 lb lean stewing beef
3 medium onions, sliced
1 Large green pepper deseeded and chopped.
15 oz. tin tomatoes
Salt & Pepper to taste
Cut meat into 1 inch cubes. Place onions and pepper in a pan of water and simmer for 3 minutes, then drain. Layer the meat, chopped peppers and onions and onions with the tomatoes in an ovenproof dish. Season with salt & pepper. Cover & cook in a warm oven (325 degrees F/Gas 3) for 2-2 ½ hours.

MEAT LOAF (serves 4)
6 oz. minced beef
½ egg yolk
½ tsp lemon juice
1 oz. chopped onion
Thyme pinch to taste
2 fl. oz. Beef stock
1 tsp tomato puree
Combine all ingredients together, cover with foil. Bake in a loaf tin at 350 degrees F for 1 hour. Serve hot or cold.

BEEF CURRY (serves 4)
½ lb cooked beef cubed and diced
2 apples cored and diced
1 pint beef stock
1 tbsp tomato puree
1 large cauliflower
Salt & Pepper to taste
1-2 tsp curry powder
Simmer onions in stock until tender. Add curry powder, diced apple, beef pieces, tomato puree, and simmer until beef is cooked, season. Cook sprigs of cauliflower in water and drain. Serve curry on a bed of cauliflower.

BAKED LAMB CHOPS (serves 4)
4 Lamb chops (1 inch thick)
1 oz. cooking oil
2 onions sliced
12 oz. can tomatoes
½ tsp salt
¼ tsp pepper
2 oz. cottage cheese
2 oz. wholemeal breadcrumbs
Trim surplice fat from chops, heat oil and brown chops. Place in a shallow casserole in a single layer. Place onion over chops, pour on tomatoes and add seasoning. Mix cheese and breadcrumbs and spread over chops. Cover and bake slowly for 1-1 ½ hours.
