*FAT FREE FRUIT LOAF*
12oz (350G) mixed dried fruit
4oz (125g) brown sugar
8oz (225g) self-raising flower
1 egg beaten
6 fluid oz. (175ml) cold tea
1 tsp mixed spice
Soak fruit and sugar in a mixing bowl overnight.
Grease and line a loaf tin and preheat oven to 180 degrees C/350 degrees F/gas mark 4.
Stir egg into fruit mixture.
Sift flour and spice together and stir into fruit mixture.
Mix thoroughly, place in prepared loaf tin and bake for 45 minutes.
Remove from tin and cool on a wire rack.
