*May’s Vegetable Dishes & Salads*

 

Vegetable Dishes and Salads

Orange Salad (serves 4)

Half a cabbage – shredded

1 large carrot – shredded

1 head of celery – chopped

Mix all of the above together and lastly add 2 oranges segmented + 2tsp lemon juice mix again and serve.

(115 calories per portion)

Carrot & Raisin Salad

3 Large carrots

2 tsp chopped parsley

1 Large lettuce

2 oz. raisins

Lemon Juice to taste

Mix grated raw carrot with seedless raisins. Add lemon juice to moisten. Serve on a bed of lettuce. Garnish with parsley.

(130 calories)

 

Basic Low Fat Yogurt Dressing

150ml (1/4pt) natural low fat yogurt

1 tbsp. lemon juice

(75calories)

Variations

 Herb dressing-Add 2 tbsp. chopped herbs.

Devilled dressing-Add 1tbsp mustard &1 finely chopped large gherkin.

Curry Dressing -Add 1-2 tsp curry paste.

 

Cabbage Slaw ( serves 4)

¼ melon sized pieces of red & white cabbage-shredded.

1 small onion thinly sliced.

1 medium carrot peeled and grated.

2 tbsp. sultanas

Juice of 1 orange

Dtsp. of low calorie mayonnaise

(90 calories per portion)

 

Swedish Salad:

1 inch cucumber-diced

3 oz. sliced mushrooms

4 oz. cottage cheese

1 onion chopped

1 red pepper de-seeded and chopped

Dressing; ¼ pt. tomato juice, 1tbsp. vinegar, salt & pepper to taste mix well.

(100 calories per portion)
